Baked Banana Boats

Ingredients:
4 ripe bananas
100g Bennetto Intense Dark Chocolate, chopped

Caramel Sauce:
3/4c coconut milk
1/2c dates, soaked in boiling water for 5mins 1/4 tsp salt

To Serve:
coconut yoghurt or ice cream goji berries
peanuts, chopped

Method:

Pre-heat the oven to 200C.

Leaving the banana skins on, cut the bananas clean down the middle. In each banana half make a slit down the middle. Cut till you get to the skin, but DON’T cut through the skins!
Now stuff each banana half with chopped dark chocolate.
Place the bananas on a baking tray and bake for 7mins.

While the bananas are cooking, make the caramel sauce. In a blender add all of the ingredient and blend until smooth and creamy. Set aside.

Once the bananas are cooked, place on a plate and top with caramel sauce, coconut yoghurt/ice cream, goji berries, peanuts and extra chocolate.
