The refreshing zucchini carries the flavours of lemon, extra virgin olive oil, salt, pepper and hot chilli so incredibly way.
It melts in your mouth paired with the creamy cashew cheese.
Feel free to use feta or labneh instead.
We love to serve it on fresh soft seedy sourdough or crispy seeded crackers.
