Caramelised Banana Oat Pancakes
They say the a way to a persons heart is through their stomach...
Treat mum well this Mother's Day with these fluffy, tender, wholesome pancakes made in less than 20 minutes, topped with coconut yoghurt, her favourite fresh fruit, walnuts, coconut chips + goji berries.
Caramelised Banana Oat Pancakes
SERVES 2
Ingredients:
1/2 cup rolled oats
1 ripe banana, mashed
1 egg or 1 flaxseed egg (1Tbsp ground flax + 3 Tbsp water)
1/4 cup nut milk
1 Tbsp lemon juice
1 Tbsp maple syrup
1 tsp vanilla
1/2 tsp spices (we used cinnamon and ginger)
1/8 tsp baking soda
pinch of salt

coconut oil, for cooking
Serve with your choice of the following:
Coconut yoghurt
Fresh fruit
Nut butter
Maple syrup
Nuts and seeds
Granola
Method:
*if using flaxseed egg make now to allow it the thicken.

Mash the banana and add to a small bowl.
Add remaining ingredients to the banana and mix until well combined.
Heat a frying pan on medium to high heat and add 1 tsp of coconut oil.
When the oil is melted add the mixture by dolloping into round pancakes.
Leave to cook for 4-5miutes on each side or until golden brown. When you flip the pancakes you may need to add more coconut oil so they don’t stick to the bottom of the pan.
Continue this process till all the mixture is made into pancakes.
Top with desired toppings and serve.
